Healthy Cooking: Easy Mexican Beef Wraps

Another easy, fun recipe for a quick delicious and healthy meal for you in the form of these Mexican beef wraps with guacamole, medium rare Angus beef cubes, pico de gallo, and lots of cheddar.

Let’s begin!

Ingredients: (Serves 2)
3-4 whole wheat wraps
1-2 beef steaks
2 tomatoes
1 ripe avocado/ready-made guacamole
1 ripe mango
1/2 onion
lettuce 

parsley
olive oil
lime juice
balsamic vinegar
pepper
salt

Let’s start with the homemade pico de gallo. Chop the tomatoes, mangoes, onion and parsley finely.

Mix with some olive oil, lime juice, balsamic vinegar, salt and pepper to taste as you like. You should get this beautiful bowl of colour.

Now, on to the beef! We love our beef medium rare but go ahead and cook it as you like if you prefer it more done. We just did a quick sear with melted butter on high heat for 20-30 seconds on each side after marinating the steaks in salt and pepper.

Dice into cubes like this. And set aside while we assemble the wraps.

Heat the wraps up on a pan till slightly brown. Then place the lettuce on the skin before putting guacamole (we used ready made avocado dip because the avocados weren’t ripe yet. but please go fresh if you can it tastes so much better!)

Arrange the beef cubes on the lettuce and guacamole.

Then top with cheddar cheese. And you’re ready to eat! It’s so simple and a really healthy way to enjoy either at home or packed to go for lunch or a quick snack.
