Healthy Cooking: Oven-baked Spiced Herb Chicken Breast


An oven-baked chicken breast is one of the most versatile dishes you can make. You could serve it up on its own with sautéed vegetables. Or even use it in salads, sandwiches and even on pizza. It’s also a much healthier option than frying or grilling. The trick to get it juicy is how you cook it in the oven. And for flavour? It’s all about the spices.


What you’ll need:


  • 2 large chicken breasts
  • salt
  • olive oil
  • dukkah
  • thyme
  • pepper

And that’s really it!

So, many of you are wondering what dukkah is.


It’s an Egyptian condiment consisting of a blend of herbs, nuts and spices. It’s traditionally used with breads as a dip. But i love the flavour that comes with it and wanted to try it with chicken. For those who want a more intense flavour, a dukkah crusted chicken is absolutely divine.


What you need to do is marinate the chicken with some olive oil, salt, dukkah, and thyme. Rub it into the meat and make sure both sides are well balanced.


Then place it on a greased oven griddle or tray and pop it into an oven preheated to 200 degrees celsius.

It takes just 15-20 minutes for the chicken to be done. And the result is amazing! Super juicy in the middle, and you can see how tender the meat is. Just fantastic.
