Warm, soft, moist and oh so full of that heavenly banana flavour.. nothing warms the soul like a gorgeous loaf of banana cake. The whole house smells like heaven right now, and my belly is warm with a second slice of one of my favourite go-to comfort foods.
The secret to a great banana cake? Always use super ripe bananas. Don’t worry if they appear a little bruised. It makes for great flavour! Here’s the super simple recipe:
- 2-3 large ripe bananas
- 1/3 cup melted butter
- 1 tsp baking soda
- pinch of salt
- 3/4 cup sugar
- 1 large beaten egg
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
First, preheat the oven to 175C. Then, butter a loaf pan and set aside.
Next, in a mixing bowl, mash bananas with a fork until smooth. Then stir in melted butter, before mixing in baking soda and salt.
Then, stir in sugar, beaten egg and vanilla extract.
Mix in flour. Then, pour the mixture into the prepared loaf pan.
Bake for 50 minutes to an hour at 175C or until a toothpick in the middle comes out clean.
Remove from oven and let cool for a few minutes before removing banana cake from the loaf pan.
Let it cool completely before slicing and eating for best results. Of course, I couldn’t help myself and tucked into a couple slices warm out of the oven. This goes great as a breakfast slice, with butter, or an accompaniment to ice-cream or just a delicious tea-time snack.
